When you read an amount of vitamin A on a product's 'Nutrition Facts' label it is counting retinol and all carotenoids as vitamin A. Retinol is made from the carotenoid beta-carotene and is the only one of these molecules counted on 'Nutrition Facts' labels that is truly vitamin A. Carotenoids are so much more bio-available when cooked that even though the cooking destroys some of all the types of carotenoids in a product you will absorb more total than if you ate the product raw. I know goji berries, carrots and tomatos are sources of carotenoids. Carotenoids can protect you from cancer.

'Vitamin E' usually refers to alpha-d-tocopherol, but there is a whole spectrum of active toco-molecules that I like to call 'E vitamins'. Nuts and seeds including legumes and brown rice are the best source of them followed by avocado, spinach and fruits. E vitamins can protect you from atherosclerosis and stroke; over time they can allow the arteries to recover from arterial plaque, improving circulation including to the brain.
