nutrition 7: Lutein, Zeaxanthin, and Choline

Lutein and zeaxanthin are anti-oxidants which concentrate in the eyes and prevent cataracts and blindness (macular degeneration). Sources include leafy greens, pistachios, goji berries, corn, and egg yolks. Lutein and zeaxanthin are actually what give egg yolks their yellow color.

Choline is another important nutrient found in egg yolks. The body uses choline to make the neurotransmitter acetylcholine which is essential for memory. From birth to breastfeeding to old age, choline is used by the brain to make connections among the units composing the computational structures of our brains.
